Vegan Beet And Black Bean “Meatballs” Recipe

    • 1 cup black beans, cooked and drained
    • 1 cup grated beets
    • 1/2 cup oats, ground into flour
    • 1/4 cup breadcrumbs
    • 1/4 cup finely chopped onion
    • 2 cloves garlic, minced
    • 2 tablespoons tomato paste
    • 1 tablespoon soy sauce
    • 1 teaspoon dried oregano
    • 1 teaspoon smoked paprika
    • 1/2 teaspoon cumin
    • Salt and pepper, to taste
    • 2 tablespoons olive oil (for baking)


    Preheat the Oven:

    Preheat your oven to 375°F (190°C).

    Prepare Black Beans:

    Rinse and drain the black beans. Mash them in a large mixing bowl using a fork or potato masher.

    Grate Beets:

    Peel and grate the beets. Add them to the bowl with the mashed black beans.

    Combine Ingredients:

    Add ground oat flour, breadcrumbs, chopped onion, minced garlic, tomato paste, soy sauce, oregano, smoked paprika, cumin, salt, and pepper to the bowl. Mix everything well until the mixture is evenly combined.

    Shape into “Meatballs”:

    Take about 2 tablespoons of the mixture and shape it into a ball using your hands. Repeat until all the mixture is used, placing the “meatballs” on a parchment-lined baking sheet.


    Brush the “meatballs” with a little olive oil and bake in the preheated oven for 25-30 minutes or until they are golden brown and firm to the touch, turning them halfway through for even cooking.


    Once done, remove the “meatballs” from the oven and let them cool for a few minutes before serving. You can serve them with your favorite marinara sauce, pasta, or in a sandwich.
