Vegan Cauliflower And Green Bean Casserole Recipe


    • 1 medium cauliflower, cut into florets
    • 2 cups fresh green beans, trimmed and cut into bite-sized pieces
    • 1 cup sliced mushrooms
    • 1 medium onion, finely chopped
    • 3 cloves garlic, minced
    • 1 can (14 oz) of coconut milk
    • 1/4 cup all-purpose flour
    • 1/4 cup nutritional yeast
    • 2 tablespoons olive oil
    • 1 teaspoon Dijon mustard
    • 1 teaspoon onion powder
    • 1 teaspoon garlic powder
    • 1/2 teaspoon smoked paprika
    • Salt and pepper to taste
    • 1 cup crispy fried onions (check label for vegan options)


    Preheat the oven:

    Preheat your oven to 375°F (190°C).

    Steam the vegetables:

    In a large pot, steam the cauliflower and green beans until they are just tender. This should take about 5-7 minutes. Once done, set aside.

    Prepare the sauce:

    In a saucepan, heat olive oil over medium heat. Add chopped onions and garlic, sauté until they become translucent. Add sliced mushrooms and cook until they release their moisture.

    Make the roux:

    Sprinkle flour over the sautéed vegetables and stir continuously for about 2 minutes to create a roux. Gradually whisk in the coconut milk to avoid lumps.

    Season the sauce:

    Add nutritional yeast, Dijon mustard, onion powder, garlic powder, smoked paprika, salt, and pepper to the sauce. Stir well and let it simmer until the sauce thickens.

    Combine vegetables and sauce:

    In a large mixing bowl, combine the steamed cauliflower and green beans with the sauce. Mix gently to coat the vegetables evenly.

    Transfer to a casserole dish:

    Transfer the vegetable mixture into a greased casserole dish.


    Bake in the preheated oven for 20-25 minutes, or until the casserole is bubbly and the top is lightly golden.

    Add crispy onions:

    Sprinkle crispy fried onions on top during the last 5 minutes of baking.
