Warming Hungarian Mushroom Soup Recipe

    Ingredients:

    • 1 pound (450g) fresh mushrooms (any combination of cremini, button, portobello, or wild mushrooms), cleaned and sliced
    • 1 large onion, finely chopped
    • 3 cloves garlic, minced
    • 2 tablespoons olive oil
    • 4 cups (950ml) vegetable broth
    • 2 cups (475ml) water
    • 1 tablespoon Hungarian paprika
    • 1 teaspoon dried thyme
    • 1 teaspoon caraway seeds
    • 1 bay leaf
    • Salt and pepper to taste
    • 1 cup (240ml) sour cream
    • 2 tablespoons all-purpose flour
    • 2 tablespoons chopped fresh parsley, for garnish

    Instructions:

    Heat the olive oil in a large pot over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

    Add the minced garlic to the pot and cook for another minute until fragrant.

    Add the sliced mushrooms to the pot and cook until they release their moisture and start to brown, about 8-10 minutes.

    Sprinkle the flour over the mushrooms and stir well to coat, cooking for another 2 minutes.

    Pour in the vegetable broth and water, stirring to combine. Add the Hungarian paprika, dried thyme, caraway seeds, bay leaf, salt, and pepper.

    Bring the soup to a simmer, then reduce the heat to low. Let the soup simmer gently for 15-20 minutes to allow the flavors to meld together.

    In a small bowl, whisk together the sour cream with a ladleful of hot soup until smooth. This helps to prevent curdling when adding the sour cream to the soup.

    Gradually stir the sour cream mixture into the soup, stirring constantly until well incorporated. Taste and adjust seasoning if needed.

    Allow the soup to heat through for another 5 minutes, but do not let it boil once the sour cream has been added.

    Remove the bay leaf from the soup and discard.

    Serve the Hungarian mushroom soup hot, garnished with chopped fresh parsley. Optionally, you can serve with crusty bread or a dollop of additional sour cream on top.
